HFIM student team wins Dutch Ecotrophelia 2020
A team of students from the Maastricht University Campus Venlo joined the Dutch Ecotrophelia finales 2020 and won the first prize with an alternative snack made from sustainably cultivated shiitake mushrooms
A team of students from the Maastricht University Campus Venlo joined the Dutch Ecotrophelia finales 2020 and won the first prize with an alternative snack made from sustainably cultivated shiitake mushrooms. This entails that they will participate in the European finals, which shall be held in Paris coming October. The goal of the national Ecotrophelia is developing a new food product for industrial production and / or with high market potential.
Other teams from the master's programme Health Food Innovation Management who participated were Team Faba who developed Fabafoam, a foamy, plant-based egg white replacer made from aquafaba (the boiling water of chickpeas) and Team PastaPeels developed TagliOnion, a tagliatelle-shaped pasta infused with leftover onion peels.
