"Growing healthy futures: lessons learned from the Kids University"
Early adoption of healthy eating habits is important, as a nutritious diet supports children’s growth and development. Children’s eating behavior is shaped by a complex interplay of factors. In her research, Ilse van Lier focuses on two of these factors: nutrition education and the availability of (healthy) food products, both in primary schools and children’s immediate living environments. First, she mapped the fruit and vegetable intake of Dutch children and adults using a fingerprint scanning method. The Dutch overestimate their intake: in reality, only 15% of the children and 11% of the adults consume the recommended amounts. Next, she explored how experiential nutrition education can enhance knowledge, attitudes, and eating habits. The results show that such programs can strengthen attitudes toward healthy eating. Finally, Van Lier addresses food innovation: her studies show that children can play a valuable role in product development. Successful nutrition interventions depend on thoughtful implementation, alignment with the target group, and attention to context.
